This meal is truly delicious. So much I wanted to type this post while I finished my meal. This morning I was watching THE KITCHEN on The Food Network and they did a segment on fall favorites “Gourds”! I was super excited. I Love learning new ways to cook just about anything but especially squash. I feel it is an under utilized produce these days. Plus, there are so many to choose from which I love!
Well, they showed a pasta recipe with butternut squash, sage, butter, olive oil, salt, pepper, garlic, parmesanc and pasta. What caught my interest was that she cubed the Squash then roasted it. I, of course, started taking notes. Side note- I even keep a journal near the couch so when unique recipes are shown I am able to jot them down.
Although I had every intention on running to the store to pick up the few items I didn’t have, I wasn’t able to make it ( planting a garden can really tire you out- as I found out today). But I couldn’t get the picture of the roasted cubed squash out of my head. So I looked at what I had on hand and went from there. I could just taste the end result in my head so I couldn’t wait. I used:
- ground turkey
- French lentils
- roasted cubed butternut squash
- sprouted brown rice
- chicken broth
- tomato – last minute addition
After I cut up the squash, I drizzled them with canola oil (since I was out of olive oil) and then sprinkled them with salt and pepper. Placed the pieces in a casserole dish uncovered and baked on 370 degrees until tender and edges were brown. YUM YUM! While that was cooking I started on the turkey and lentils.
For the ground turkey I started with a little canola oil then just started grabbing whatever seasoning I saw that looked like it could work. That has kind of been my new thing, mixing a lot of seasonings together to bring out different flavor notes. Like for the turkey after I added the regular seasonings, I added a pinch of nutmeg and two bay leaves. This was such a great idea, you can taste a hint of something sweet and a little bite. You have to try it! My cooking tip of the day is to have fun with your seasonings!
For the lentils I cooked them in chicken broth and simple seasoning from my pantry. Lentils are great and super easy to cook in no time. Its a gentle veggie and can really be added to just about any savory dish. I even like sneaking them in a roaster when I roast a whole chicken. Just add them to the bottom and let them cook in the chicken drippings while the chicken cooks.
As the beans cooked I thought a tomato would go great in there. Thankfully I had a fresh one still. I cut up a small amount and added it in to cook with the lentils. Perfect! Now all I had to do was wait for it all to be done!
Yes its done, I couldn’t wait to dig in. This was such a nice surprise. The turkey and lentils provide a savory flavor and there is a nice bite from the sprouted brown rice while the butternut squash adds a small hint of sweetness.
