This has to be one of my favorite desserts of all times. Right up there with Crème Brulee! Key Lime Pie, just the perfect mixture of sweet and tangy! Meant for those long summer days sitting on the porch in a old rocking chair, rocking to the sounds of the wind as the sun sets…. well at least in my dreams right! For the longest time I found that Publix has had the best tasting Key Lime Pies ever, even better than most restaurants. That was until I tried a Key Lime Pie at work made by my coworker Robbie. Simply Amazing! She used Fresh Key Limes from her Key Lime tree and after just two slices I knew I had to get this recipe.
Turns out this dessert is pretty easy to make, literally three ingredients. Even though I am not one to bake much, I had to give this one a try. Not to mention it was another excuse to use my new Kitchen-Aid Mixer. Well lets get started.
You will need:
1/2 -3/4 cup of key lime juice
1 1/2 can of sweetened condensed milk
3 egg yolks
Graham Cracker Pie Shell ( well four ingredients 🙂 )
First cut up your limes and squeeze them. Now first I started squeezing these little boys by hand, then it dawned on me… Traci you have a juicer! Score! Using this gadget cut the time down drastically, busy baking moms you so need one of these. I loved how this stage made my house smell so fresh and clean- almost like ” Yeah, I’m that mom who keeps a spic and span house”… I’m so not that mom.
Then for you experienced cooks, time to separate the yolks from the whites. So happy my grandmas helped me learn this method, goes a long way in cooking. I have so eaten a crunchy cupcake or two …. hey comes with the territory! BTW aren’t these little measuring bowls the cutest? Love that Pioneer Woman.
Mix all together..
Bake on 350 for 10 mins then let it cool..
Presto! You are in dessert heaven! Since I can’t have a glass a wine right now ( gee thanks Savannah) this pie will have to take its place. Yay Me!
At the last minute Jordan and I made whip cream (heavy whipping cream and powdered sugar) to top it off, sorry no picture I was in a rush to eat. Oh well, guess this baby weight will have to stay for a little longer!
